The primary role of a Barback at Ojos Locos is to provide friendly and excellent service to every guest while keeping the bar area clean and stocked at all times. This includes assisting bartenders with their job functions and maintaining a clean environment.

The Barback is responsible for preparing the bar recipes according to brand specifications and anticipated business levels. They also follow proper mug rotation to ensure that frozen mugs are used 100% of the time.

The Barback ensures that the bar and floors are clean by wiping down surfaces and removing used glassware. They also clean and maintain items used for balones, such as soccer balls, bases, spouts, magnets, and chill sticks, following proper cleaning procedures.

The Barback maintains par stock levels by placing orders for wine, champagne, beer, liquor, and perishables at the start of each shift. They also receive and deliver products to the appropriate outlets and stock them according to specifications.

The Barback organizes and cleans pump rooms, coolers, and storage areas to meet specifications. They also sweep and mop floors in these areas and soak and clean soda bag-in-box hoses and nozzles.

The Barback collects excess glasses from the bars and restocks them in their appropriate outlets according to specifications. They also retrieve glassware from dish areas and ensure that glass washers are functioning properly with correct chemical mixtures and volumes.

The Barback maintains a clean work environment in accordance with Health Department standards, which includes wiping down walls behind trash containers and ensuring all areas are sanitary.

The Barback collects trash from all outlets throughout the shift and wipes down the walls behind trash containers to keep the area clean and sanitary.
